The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty.

It is recommend to always add a water filter to your order if you do not have one already. Replacement time of filters depends the water and quantity of drinks being made (see estimating calculator).

Q: What is the difference between volumetric and manual dosing in the Digit?

A: Volumetric dosing is a far more automated process than manual dosing.

When the user hits the single or double volumetric dosing button on the Digit, the machine automatically distributes the correct volume of water. So while the barista starts extraction, the Digit ends it at the perfect volume.

This is why consistency is increased with volumetric controls—it’s easier for a machine to regulate volume than it is for humans. Every shot is uniform in this respect.

The user both starts and ends extraction when using the manual button. While you might not get the same consistency, you’ll gain the ability to get creative with any shot at any point in time.

If a customer asks for a ristretto shot and it isn’t programmed into the machine, the barista just switches to manual brewing. No time-consuming changes must be made to the machine’s programming.

Q: What is the difference between the Aurelia II Digit and the Aurelia II Volumetric?

A: The big difference that produces a noticeable effect is the Digit’s LCD display. This display is an upgrade that makes an already user-friendly machine even simpler in operation.

It’s generally agreed that nine bars of pressure are needed to create a good espresso shot. You can see whether this is happening or not by viewing the bar pump gauge on the front of the Digit.

If you’re not getting the right pressure, one thing to start looking at is your brew ratio. All this means is tweaking the amount of coffee you grind into your portafilter to the volume created when you pull the espresso shot.

You may need to add more or less coffee. If this isn't the issue, try changing the grind fineness. Or you may need to adjust your tamping pressure (if you tamp too hard or too lightly, it can negatively affect extraction).

Checking the pressure gauge is part of the process of ensuring that all your steps to making espresso have been correct.

Q: What is the soft infusion system in the Digit?

A: When you see “soft infusion,” what you’re reading about is Nuova Simonelli’s pre-infusion system.

For those new to the term, pre-infusion occurs (in a machine that features it) when water is gently released into the brew group to saturate the coffee puck and promote full, even extraction. 

This may happen before the pump kicks on or after, while the pump slowly increases pressure (but well before the nine bars are reached).

The Digit’s soft infusion system releases pressure-free water into the coffee puck before the pressurized water comes through. This settles the coffee, prevents channeling, and creates a well-rounded espresso flavor and excellent crema.

Q: Who needs the pod kit adaptor for the Digit?

Smart Wand Options

The Digit is compatible with up to two temperature-controlled Gooseneck or Auto-Steam Wands.

Temperature Controlled Gooseneck Wand

This handy device replaces one or two of the Digit’s manual steam handles with a button. 

Pressing the button begins the milk frothing process. The steam wand reads the milk temperature, and the barista moves the pitcher to texture the milk. At the optimal milk temperature, the automated steam shuts itself off. 

You’ll get lattes and cappuccinos at perfect temperatures every time (i.e., burn-free milk).

Auto-Steam Wand

Like the Gooseneck Wand, the Auto-Steam Wand puts a button in place of the manual steam handle. 

Unlike the Gooseneck Wand, the Auto-Steam Wand requires no input from the barista. It textures the milk by itself. 

All the barista needs to do is place the wand in the milk and let the Auto-Steam Wand create beautiful microfoam for every drink.

The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty.

It is recommend to always add a water filter to your order if you do not have one already. Replacement time of filters depends the water and quantity of drinks being made (see estimating calculator).

Common Questions and Answers

Q: What is the difference between volumetric and manual dosing in the Digit?

A: Volumetric dosing is a far more automated process than manual dosing.

When the user hits the single or double volumetric dosing button on the Digit, the machine automatically distributes the correct volume of water. So while the barista starts extraction, the Digit ends it at the perfect volume.

This is why consistency is increased with volumetric controls—it’s easier for a machine to regulate volume than it is for humans. Every shot is uniform in this respect.

The user both starts and ends extraction when using the manual button. While you might not get the same consistency, you’ll gain the ability to get creative with any shot at any point in time.

If a customer asks for a ristretto shot and it isn’t programmed into the machine, the barista just switches to manual brewing. No time-consuming changes must be made to the machine’s programming.

Q: What is the difference between the Aurelia II Digit and the Aurelia II Volumetric?

A: The big difference that produces a noticeable effect is the Digit’s LCD display. This display is an upgrade that makes an already user-friendly machine even simpler in operation.

But you’re getting high performance and advanced functionality in each machine.

Q: How do I use the bar pump gauge on the Digit to make better espresso?

A: Reading this gauge tells you that something needs to be changed in your espresso process.

It’s generally agreed that nine bars of pressure are needed to create a good espresso shot. You can see whether this is happening or not by viewing the bar pump gauge on the front of the Digit.

If you’re not getting the right pressure, one thing to start looking at is your brew ratio. All this means is tweaking the amount of coffee you grind into your portafilter to the volume created when you pull the espresso shot.

You may need to add more or less coffee. If this isn't the issue, try changing the grind fineness. Or you may need to adjust your tamping pressure (if you tamp too hard or too lightly, it can negatively affect extraction).

Checking the pressure gauge is part of the process of ensuring that all your steps to making espresso have been correct.

Q: What is the soft infusion system in the Digit?

A: When you see “soft infusion,” what you’re reading about is Nuova Simonelli’s pre-infusion system.

For those new to the term, pre-infusion occurs (in a machine that features it) when water is gently released into the brew group to saturate the coffee puck and promote full, even extraction. 

This may happen before the pump kicks on or after, while the pump slowly increases pressure (but well before the nine bars are reached).

The Digit’s soft infusion system releases pressure-free water into the coffee puck before the pressurized water comes through. This settles the coffee, prevents channeling, and creates a well-rounded espresso flavor and excellent crema.

Q: Who needs the pod kit adaptor for the Digit?

A: Beginner baristas and those with little to no experience with coffee might choose espresso pods. A machine outfitted to take espresso pods requires no grinder to make espresso. The pods replace the freshly-ground coffee.

While espresso pods are not typically seen in coffee shops, they might be found in restaurants, offices, and other locations that lack trained baristas.

While fresh coffee is always going to win in terms of quality and flavor, pods can be the only real solution in many environments.

In this case, espresso pods are not just convenient, but necessary, making a great alternative to fresh espresso and giving anyone the ability to make their favorite latte.

In-House Testing & Manufacturing Our espresso machines and grinders are high quality, specialty equipment. They are manufactured mainly in Italy, Spain, and Germany (for Mahlkonig grinders).

Some hand crafted machines may have slight imperfections from manually hammering the raw materials.

Many products are bench tested prior to shipping to ensure they are in perfect working condition before arriving at your location.

Therefore, some coffee grinds and remnants of water may be visible upon receiving the machine. This does not indicate the machine is used. We only ship brand new machines unless we state otherwise.

This thing is awesome and arrived SUPER quick!

Quick and easy with a little mess.

As advertised, it tamps consistently. Each tamping process is quicker and easier than manual tamping. I like the fact the process requires only one hand, as opposed to two in manual.
The only drawback is that the tamper surface gets dirty with the grind very quickly (because it does not 'twist" as in manual). After 3 or 4 tamps we have to clean it with a rug or a brush, leaving the coffee grind around the device.
Overall, we are happy with the purchase, and my overworked wrist with a tendonitis thanks a lot. I know it is an expensive investment, but loss of my hand will cost a lot more.
