Description
There are espresso grinders, and then there’s the Mythos.
This on-demand grinder is a pleasure to use. With an easily navigated LCD screen, a portafilter holder, and an automatic clump crusher, you’ll be serving superior espresso in no time.
There’s a Mythos made specially for each individual high-volume business.
Because everyone’s needs are different, the Mythos comes in three different configurations.
The Basic model (which is anything but basic) offers multiple programmable dosage options and modes. The Mythos Plus comes with a built-in tamper while the Mythos Clima Pro features an intricate temperature control system.
Nuova Simonelli is a brand that professionals trust.
This company has been creating innovations like T3 technology (see Nuova Simonelli’s Aurelia II T3) since 1936.
Producing models that have earned the title of the World Barista Championship’s official espresso machine, Nuova Simonelli is a widely recognized and respected name.
Key Features and What They Mean
Mythos Clima Pro Features
Temperature Controlled Burrs
Unlike most grinders, the Clima Pro comes with a dual heating and cooling system that keeps the temperature optimal all day long. This greatly reduces the number of adjustments needed as the machine is used throughout the day, saving time, energy, and espresso as less purging is required.
75mm Titanium Flat Burrs
Expect more from titanium burrs. These will last twice as long as typical burrs (for up to 3,500 pounds of coffee beans). At 75 mm in diameter, they need fewer rotations to grind the coffee, contributing to a cool environment.
LED Illuminated Work Space
You may not even realize that you were struggling to see what you were doing until you benefit from LEDs around the grinder. Even in a poorly-lit room, you’ll never need to sacrifice visibility again.
Micrometric Grind Adjustment
Baristas can adjust the grind in the tiniest of increments. You can dial in the grind with the highest degree of accuracy for the best results.
Clump Crusher Tech
This ingenious technology stops clumps before they happen, guaranteeing that every dose is smooth and fluffy. Clump-free coffee makes more evenly extracted espresso.
Multi-Function LCD Display
This display is easy to read and even easier to use, simplifying all the advanced functions of the Mythos. Adjust dosages, select continuous grinding barista modes, and lock the grinder so the settings can't be changed right through the LCD display.
Portafilter Holder
Providing hands-free grinding, the portafilter holder allows you to walk away while the machine grinds into the portafilter. Attend to other pressing tasks with the knowledge that the Mythos is fulfilling this task for you.
Mythos Plus Features
Built in Tamper
Specially designed for the Mythos Plus, the built-in tamper provides quick, consistent tamping. Taking variable pressure out of the equation, this tamper will automatically create more consistent espresso results (for baristas of any skill level).
75mm Titanium Flat Burrs
Expect more from titanium burrs. These will last twice as long as typical burrs (for up to 3,500 pounds of coffee beans). At 75 mm in diameter, they need fewer rotations to grind the coffee, contributing to a cool environment.

Common Questions and Answers
Q: What is micrometric grind adjustment in the Mythos and why does it matter?
A: Different grinders have different adjustment mechanisms for fine-to-coarse grinding. A micrometric grinder is a stepless grinder, which is very different from a stepped grinder.
A stepped grinder provides preset fineness options. For example, you may get between 10 and 20 grind settings from espresso-fine to a coarse French press grind.
With a micrometric grinder, there are no presets. You can turn the dial in infinitely small adjustments for the most precise grind settings.
Professional baristas need as much control of the grind settings as possible to make the best espresso. If you’re buying an espresso grinder for your shop, bar, restaurant, or hotel, a micrometric grinder is going to give your customers a truly fine espresso experience.
Q: How is a flat burr grinder like the Mythos different from a conical burr grinder?
A: Flat burr grinders and conical burr grinders have different setups inside and produce different flavors, if you ask many expert baristas.
In a flat burr grinder there are two horizontally-facing burrs. The coffee is sandwiched between them and ground to evenly sized particles.
With a conical burr system, coffee beans are dropped down vertically (actually, at a very slight angle) and crushed at a low RPM into bimodal (multi-sized) particles.
Flat burrs are thought to produce blended flavors and give special attention to rich chocolaty and nutty notes. Conical burrs are said to enhance brighter notes and may produce a more syrupy body.
Most baristas have their preferences, but both grinder types have their advantages for certain types of coffee.
Q: What does on-demand grinding mean for the Mythos?
A: As an on-demand grinder, the Nuova Simonelli Mythos grinds coffee directly into the portafilter. In other words, it skips a holding mechanism that you would dose the coffee out of and into your portafilter.
On-demand grinding guarantees the freshest espresso. There’s no chance that the coffee will sit in the dosing chamber and get stale (which can happen if you’re not using a grinder in locations with the absolute fastest paces).
Coffee is fragile. It oxidizes quickly, which means that the flavors begin to deteriorate at a speedy rate essentially the second you grind. The faster the coffee makes it into the portafilter and into the espresso machine, the better the espresso will taste.
Q: What role does temperature play in a coffee grinder?
A: This is a very common question, and one that deserves a thorough explanation.
Temperature is a huge element of espresso quality, starting in the grinder. Too much heat in the grinder makes bad-tasting espresso with burned or bitter flavors, even if the shot is pulled with perfect technique in the espresso machine.
Where does the heat come from? It can come from the motor and friction as the burrs grind, which is why proper ventilation is important in a grinder design.
The Mythos actually takes it a step further and adds not only a cooling system, but also subtle heating action to counteract thermal expansion in the burrs. This occurs as the grinder is used throughout the day.
Thermal expansion makes it necessary to keep adjusting the grind settings, as it will throw off the grind and change your espresso shots unless compensated for.
This is where the Mythos shines. With a dual heating and cooling system in place, you’ll not only get cool grinding for maximum espresso flavor, but also fewer interruptions as you won’t need to make constant adjustments.
