Description
The Mythos 2 is able to dose ground coffee with extreme accuracy by its actual weight, using ourgravimetricsystem, ensuring consistent density. This means the dose remains unchanged even if you change the granulometry setting (grind).
The updatedClima Pro 2.0system now allows the barista to adjust the burr temperatures, thus expanding barista’s range of choice. In addition to keeping the temperature consistent in the in grinding chamber the Mythos 2 is now more stable, reducing unwanted fluctuations of temperature, leading to more efficient workplace.
Lastly the Mythos 2 now has avariable speed motorwhich is able modulate productivity according to the barista’s needs and allows for more accurate dosing.
Mythos II Gravimetric Features
Gravimetric Controlled Dosing The Mythos II introduces gravimetric dosing. This means the grinder doses the ground coffee by weight in real time. Eliminating the need for a scale and reducing coffee wast. This feature can also be turned off via the setting to dose using time.
Variable Speed Motor The Mythos Grav and Premium now come standard with a variable speed motor. Allowing the barista to pull shots slower or quicker depending on the workflow. We have also noticed a number of impacts made to espresso itself depending on grinder speed.
Temperature Controlled Burrs The Mythos II comes standard with both a heating a cooling system similar to the Mythos One/Clima Pro. However it also introduces user temperature control. Allowing the barsita to change the parameters to best suit their coffee. The cooling system has also been centralized to the back of the unit to allow many units to be placed near each other.
Titanium Burrs 85mm This grinder comes standard with Titanium Burrs which last 2x as long as normal burrs. Allowing the ability to grind up to 3500 pounds of coffee before requiring replacement.

It performs, and has my faith that it will continue to perform for the next decade. Once I had the crane lift it into place things went smoothly. Caution: this grinder is very heavy. Other than that - it's pretty much perfect. No clumps, no mess, no hands. Weight is determined by grinding time; single, double, and manual settings. Build quality is next level. Powerful, quiet, fast, and heavy.

I've had my Quick Mill Silvano machine for 3 years now. I purchased it after 2 Breville consumer machines crapped out after 2 years... one stopped making steam, the other leaked. And neither made great tasting coffee or substantial crema. So I took the plunge and purchased this machine and I'm so happy I did. What I love about it: the PID display of boiler temp and brew time. The simplicity of the controls. The fact that I can froth at the same time as pulling shots. The quality of the parts and longevity of the machine. The ease of cleaning. Finally, and most importantly, the great taste of the espresso I get every morning from the Silvano.
This is my first espresso machine. It came promptly as ordered, and it looks great. So far I am having some issues with how long it takes to produce the espresso, and I understand that the grind size, amount of grind, and how tightly it is tamped can affect how the machine performs. I have tried various combinations of grind size, amount, etc., and I find the machine takes 5 minutes to produce a shot, and that the espresso comes out in drops, not as a stream. This may be due to my inexperience in using the machine, but until I get feedback from Majesty coffee, I can only rate the machine 3 stars.
