Q: What does the E-61 commercial group in the Giotto Type V do?
A: When you boil it down, the E-61 group provides consistency and enhancement of the espresso.
It circulates hot water through the boiler and group head continuously, whether the machine is in use or not. This keeps the water within an appropriate brew temperature range at the group head so that it doesn’t get too cool or hot.
Making the espresso tastier, the E-61 group’s automatic pre-infusion function saturates the coffee in the group head when you start extraction. Because of this, the coffee is more evenly extracted, leading to a more refined flavor profile.
Best of all, the E-61 group does all of this on its own, so you don’t need to do anything special to get the benefits to your espresso performance. That’s the power of good design.
Q: How does the PID controller in the Giotto Type V work?
A: There are PID controllers in many forms of mechanical and industrial equipment. Simply put, the PID, or proportional–integral–derivative controller, is a system that applies an algorithm to regulate the machine in some way.
The Giotto PID controller is set up to monitor and regulate internal temperatures, adjusting with total precision. Temperature can be a wild card as hot water moves from one end of the machine to another, so the control you have with the PID is huge.
You’ll gain confidence in your espresso knowing that you can reach the absolute best temperature for extraction and even play with it to experiment with different profiles if you’re feeling inventive.
Q: How do you make espresso on the Giotto Type V?
A: Using the Giotto Timer Type V is pretty exciting if you’re nostalgic about espresso. Since it’s semiautomatic, it’s much easier to operate than the original manual machines, but the lever-action group gives it that old-world aura.
After you’ve tamped your ground coffee and placed the portafilter in the group head, you just flip the lever all the way and wait for the espresso to start pouring. You’ll see it start to drip out of the group head at first as the coffee becomes saturated, then start to flow out.
When you feel that extraction is complete, you’ll push the lever all the way back into the original position and the coffee flow will stop. Now you have your beautiful shot of espresso!
