Water Info

The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty. It is recommended to always add a water filter to your order if you do not have one already.

Replacement time of filters depends on the water and quantity of drinks being made (see estimating calculator here).

A: Essentially, soft infusion is what Nuova Simonelli calls pre-infusion in its espresso machines.

If you’re unfamiliar with pre-infusion, it’s a method of getting more nuanced flavor from the coffee by gently immersing the coffee bed in water during an initial extraction stage.

When you make espresso in the Aurelia Wave Volumetric, the machine releases pressure-free water into the coffee bed for a period of time before the water is pushed through at full pressure. 

Aside from reducing the effect of tamping issues by settling the coffee, soft infusion prevents channeling and allows all of the delicate flavors to be drawn out of the coffee in a balanced way.

With soft infusion, you’ll always get a well-developed espresso flavor.

Q: What is the difference between volumetric and manual dosing in the Aurelia Wave Volumetric?

A: The biggest difference between the volumetric and manual buttons on the Aurelia Wave Volumetric is automation.

The volumetric buttons are designed to let the user press them once to get a shot of espresso. The machine is programmed to dispense the correct measurements.

If the user chooses the manual button, the machine won’t stop the extraction cycle on its own. The user pushes the button again at the appropriate time. 

While volumetric dosing presents the advantage of a more streamlined approach to extraction, manual dosing allows the user to create an espresso shot that fits exact specifications on the spot, without programming.

If you want to streamline espresso production and promote more consistency, volumetric dosing is a great way to accomplish this. But if your customers ask for a specific type of espresso shot like a ristretto or long shot, the manual dosing buttons are helpful.

Q: How do I use the bar pump gauge on the Aurelia Wave Volumetric to improve my espresso results?

A: Monitoring a shot isn’t just about seeing it pour from the group head. You can combine this with checking the bar pump gauge to get more information about what’s happening in the machine.

Generally, a good espresso shot extracting correctly will reach nine bars of pressure. If your machine isn’t getting to this point, it’s typically a good indication that you need to change your brew ratio.

This is as simple as adding more or less coffee to your dose. Try this the next time you pull a shot and see if the pressure reading changes. 

Some other issues could be your grind setting or tamping pressure. A grind fineness that's too coarse or fine or applying too much or too little pressure when you tamp can affect how successful extraction is.

Returns must be accompanied with an RMA number. Please contact us in order to have one generated. In-House Testing & Manufacturing Our espresso machines and grinders are high quality, specialty equipment. They are manufactured mainly in Italy, Spain, and Germany (for Mahlkonig grinders).

Some hand crafted machines may have slight imperfections from manually hammering the raw materials.

Many products are bench tested prior to shipping to ensure they are in perfect working condition before arriving at your location.

Therefore, some coffee grinds and remnants of water may be visible upon receiving the machine. This does not indicate the machine is used. We only ship brand new machines unless we state otherwise.

Because the boiler is so large, the 2 Group model is powerful enough to take on any rush and deliver back-to-back drinks.

For large businesses with an exceptionally high volume, two 2 Group Aurelia Wave Volumetrics may be ideal.

3 Group Aurelia Wave Volumetric

The 3 Group configuration is best for high-volume locations serving lines of customers all day long.

Three brew groups and a 17 liter boiler supply the power needed to keep up with the rushes while letting more than one barista work on the machine at the same time.

Water Info

The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty. It is recommended to always add a water filter to your order if you do not have one already.

Replacement time of filters depends on the water and quantity of drinks being made (see estimating calculator here).

Q: What is the soft infusion system in the Aurelia Wave Volumetric?

A: Essentially, soft infusion is what Nuova Simonelli calls pre-infusion in its espresso machines.

If you’re unfamiliar with pre-infusion, it’s a method of getting more nuanced flavor from the coffee by gently immersing the coffee bed in water during an initial extraction stage.

When you make espresso in the Aurelia Wave Volumetric, the machine releases pressure-free water into the coffee bed for a period of time before the water is pushed through at full pressure. 

Aside from reducing the effect of tamping issues by settling the coffee, soft infusion prevents channeling and allows all of the delicate flavors to be drawn out of the coffee in a balanced way.

With soft infusion, you’ll always get a well-developed espresso flavor.

Q: What is the difference between volumetric and manual dosing in the Aurelia Wave Volumetric?

A: The biggest difference between the volumetric and manual buttons on the Aurelia Wave Volumetric is automation.

The volumetric buttons are designed to let the user press them once to get a shot of espresso. The machine is programmed to dispense the correct measurements.

If the user chooses the manual button, the machine won’t stop the extraction cycle on its own. The user pushes the button again at the appropriate time. 

While volumetric dosing presents the advantage of a more streamlined approach to extraction, manual dosing allows the user to create an espresso shot that fits exact specifications on the spot, without programming.

If you want to streamline espresso production and promote more consistency, volumetric dosing is a great way to accomplish this. But if your customers ask for a specific type of espresso shot like a ristretto or long shot, the manual dosing buttons are helpful.

Q: How do I use the bar pump gauge on the Aurelia Wave Volumetric to improve my espresso results?

A: Monitoring a shot isn’t just about seeing it pour from the group head. You can combine this with checking the bar pump gauge to get more information about what’s happening in the machine.

Generally, a good espresso shot extracting correctly will reach nine bars of pressure. If your machine isn’t getting to this point, it’s typically a good indication that you need to change your brew ratio.

This is as simple as adding more or less coffee to your dose. Try this the next time you pull a shot and see if the pressure reading changes. 

Some other issues could be your grind setting or tamping pressure. A grind fineness that's too coarse or fine or applying too much or too little pressure when you tamp can affect how successful extraction is. 

In short, the bar pump gauge can guide you toward better practices by showing you the results of your methods.

Returns must be accompanied with an RMA number. Please contact us in order to have one generated. Returned products must be in like-new condition and sent back in original packaging, including all original parts and accessories. Items may be subject to up to a 15% restocking fee. In-House Testing & Manufacturing Our espresso machines and grinders are high quality, specialty equipment. They are manufactured mainly in Italy, Spain, and Germany (for Mahlkonig grinders).

Some hand crafted machines may have slight imperfections from manually hammering the raw materials.

Many products are bench tested prior to shipping to ensure they are in perfect working condition before arriving at your location.

Therefore, some coffee grinds and remnants of water may be visible upon receiving the machine. This does not indicate the machine is used. We only ship brand new machines unless we state otherwise.
