Key Features and What They Mean

T3 System

Multiple copper boilers work together, letting baristas set the temperature for each group head independently. Access the temperatures of the primary boiler, the coffee groups' boiler, and the group heads to gain unprecedented temperature precision and stability. This allows baristas to become more effective at delivering superior espresso.

Programmable Volumetric Dosing Controls

Available in the Volumetric Aurelia II T3, the dosing buttons can be programmed with your unique espresso recipes . When the barista pushes the button for a single or double espresso, the machine automatically delivers a perfect shot, generating consistency and making barista work more efficient.

Manual Dosing Controls

Featured in the Semiautomatic Aurelia II T3, the manual dosing buttons give baristas the opportunity to truly handcraft every espresso. Pulling long shots, ristretto shots, and any type of customized espresso shot upon customer request is fast and simple with these controls.

LCD Display

Everything the barista needs is right there in the LCD display. Manage doses, boiler pressure, soft infusion, and energy savings settings with no hassle. The HD display will also time up to three independent shots simultaneously, eliminating the need for external timers. User-friendliness supports efficiency.

Soft Infusion

Nuova Simonelli’s soft infusion system ensures that every nuance of the coffee is represented in the espresso. Settling the coffee in the group head, soft infusion also reduces the need for proper tamping and leads to more consistent espresso.

Raised Group Heads

If you’re serving drinks in different sizes, the raised group heads will make customer service faster. Baristas can brew directly into tall cups instead of shot glasses. Without needing to transfer the espresso to tall cups, espresso will remained undisturbed for the customer.

Reverse Mirror

There are many visual cues that tell the barista whether the espresso is pouring correctly. The reverse mirror shows hard-to-see angles while the espresso extracts, helping baristas become more effective at catching errors.

Bar Pump Gauge

Displaying the pressure connected to the pump during extraction, this gauge gives baristas important information about the espresso to better guide their process.

Water Level Indicator

Keep an eye on the boiler water levels with this indicator. This makes it easy to ensure that all is working properly.

Cool Touch Wands

Make burns from accidentally touching the steam wands a thing of the past. These wands remain cool to the touch and make cleaning quicker since milk won’t instantly burn onto them.

Push Pull Steam Lever

This ergonomic element makes texturing milk for nonstop lattes totally comfortable. Tap the steam lever on and off to get the steam power you need.

Surface LEDs

LED lights positioned around the machine light up the work space. Even in darker conditions, baristas can see what they’re doing. This is vital for detailed work that baristas perform, from espresso extraction to latte art.

Automated Cleanings

Instead of having to manually clean and backflush one group at a time, the Aurelia II T3 will do it for you. Select the group you need cleaned and let the machine do all the hard work so that you can attend to other closing tasks.

Power Saving Options

Power-saving software makes the Aurelia II T3 beautifully energy-efficient, a quality that’s becoming more important to coffee shops.

Common Questions and Answers

Q: What is the difference between volumetric and manual dosing in the Aurelia II T3 configurations?

A: Volumetric dosing brings automation to espresso brewing. The barista selects the single or double dose button and the machine delivers a shot at the correct volume, every single time.

Offering baristas more control of each individual espresso, manual dosing in the Semiautomatic Aurelia II T3 requires the barista to start and end brewing via the manual button.

Whereas the volumetric buttons in the Volumetric Aurelia II T3 give baristas the opportunity to program consistency into the machine, the manual buttons let baristas easily craft and customize each espresso by hand.

Typically, volumetric dosing is easier for newer baristas. For this reason, the Volumetric Aurelia II T3 can be more approachable for staff lacking barista skills in restaurants and other locations.

Q: What are the differences between the Aurelia II T3 and the Aurelia II Digit?

A: The Aurelia II T3 takes the Digit and adds the T3 system. The additional technology increases the machine’s performance in the hands of knowledgeable baristas.

By providing water temperature regulation throughout several points of the machine and user-controlled functionality, the Aurelia II T3 makes preparing espresso for the connoisseur easier.

Q: Why is temperature consistency important for espresso?

A: Without temperature consistency, espresso shots would potentially come out different every time. There is a very precise temperature range good espresso should fall in, which makes accuracy vital.

Some baristas also like to get creative with temperature adjustments to experiment with the espresso, making new kinds of results.

It’s common for temperatures to fluctuate in espresso machines if they don’t have systems in place to account for them—the Aurelia II T3 does.

T3 technology doesn’t just provide temperature stability. It’s a multi-point system, a completely innovative way to give the user greater ability to attend to different aspects of the total thermal management system.

Q: What is soft infusion in the Aurelia II T3?

A: Soft infusion is Nuova Simonelli’s pre-infusion system.

Often found in premium espresso machines, pre-infusion produces a more well-developed espresso flavor by ensuring balanced extraction.

The Aurelia II T3’s soft infusion system delivers pressure-free water to the coffee in the group head before the pressurized water showers the coffee puck.

This helps to settle the coffee, prevent channeling, and promote even extraction of the coffee particles. The espresso flavor and the delicate crema will both be enhanced by soft infusion.

Q: How do I use the bar pump gauge on the Aurelia II T3 to make better espresso?

A: Related to the pressure built by the pump during espresso extraction, this gauge will tell you if the pressure is adequate.

For general purposes, reaching nine bars of pressure is standard. If you don’t see that happening, your machine might be telling you that you need to adjust your brew ratio.

For those new to espresso, the brew ratio is essentially how much coffee you use to the resulting liquid volume of the espresso. A low pressure reading could be an indication that you need to add more coffee the next time you pull a shot.

It could also be telling you that you should change the fineness of the grind or apply a little more pressure when tamping.

In a way, by showing you the brew pressure, the bar pump gauge is giving you feedback on your process, helping you perfect it.
