The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty. It is recommend to always add a water filter to your order if you do not have one already.

Volumetric controls are the easiest to operate and provide the highest level of consistency.

What’s your brew ratio? It’s actually a simple concept—don’t let the terminology scare you. It’s basically the amount of coffee you use in a dose to the resulting liquid volume of the espresso.

Let’s say the pressure gauge is reading too low when you pull a shot. Seeing this information tells you that you might want to add more coffee to your dose.

Alternatively, you may need to tamp a little harder or adjust the fineness setting on your grinder. Either way, the pressure gauge can guide you toward the right process.

The Nuova Simonelli Aurelia II Volumetric is compatible with one left or right Auto-Steam or temperature-controlled Gooseneck Wand.

Auto-Steam Wand

Replacing a manual steam handle with a user-friendly button, the Auto-Steam Wand requires no input from the barista to texture milk. 

To use this feature, baristas simply place the wand in a pitcher filled with milk and let the Auto-Steam Wand do the rest.

Automating milk steaming, this feature facilitates superb results for every cappuccino, latte, and macchiato.

Temperature Controlled Gooseneck Wand

Also replacing one of your manual steam handles with a button, the Gooseneck Wand steams to the accurate temperature.

Once pressed, the steam wand reads the temperature of the milk. The barista then textures the milk by moving the pitcher. 

When the milk reaches the desired (set) temperature, the steam automatically turns off, leading to a more consistent drink and less burnt milk.

Pod Kit Adapter

This machine supports a standard pod kit adapter.

Q: What is the difference between volumetric and manual dosing in the Aurelia II Volumetric?

A: Volumetric and manual dosing represent two very different brew processes on the user’s end.

Volumetric controls are the easiest to operate and provide the highest level of consistency.

This is because the Aurelia II’s volumetric dosing buttons need only be pushed once to generate the perfect single or double espresso. The machine will automatically stop the brew process when the correct levels have been reached.

The manual button is quite different in that it offers more control to the user, making it a flexible option for users with more knowledge of the brew process.

Instead of having the machine end extraction, the barista will manually end it via the manual button.

While this means that the barista will need to know exactly when an espresso shot is fully extracted, it also means that any customized espresso can be poured on demand.

Q: Who needs the pod kit adaptor for the Aurelia II Volumetric?

A: Espresso pods are easy for beginners to use. Instead of using freshly ground espresso, you’re brewing with preformed coffee pods. It’s somewhat similar in concept to a Keurig K-Cup pod.

If you want the Barista Championship machine but easy usage for baristas with little training, you can opt for the pod kit adaptor.

It can be helpful for restaurant employees and any staff lacking the coffee background baristas have.

Q: How do I use the bar pump gauge on the Aurelia II Volumetric to make better espresso?

A: Placed right on the front of the Aurelia II Volumetric, the bar pump gauge displays pressure readings linked to the pump while espresso is being brewed.

Generally, you want to see the pressure reach approximately nine bars. If this is not happening, it’s usually an easy indication that you’ll need to adjust your brew ratio.

What’s your brew ratio? It’s actually a simple concept—don’t let the terminology scare you. It’s basically the amount of coffee you use in a dose to the resulting liquid volume of the espresso.

Let’s say the pressure gauge is reading too low when you pull a shot. Seeing this information tells you that you might want to add more coffee to your dose.

Alternatively, you may need to tamp a little harder or adjust the fineness setting on your grinder. Either way, the pressure gauge can guide you toward the right process.

In-House Testing & Manufacturing Our espresso machines and grinders are high quality, specialty equipment. They are manufactured mainly in Italy, Spain, and Germany (for Mahlkonig grinders).

Some hand crafted machines may have slight imperfections from manually hammering the raw materials.

Many products are bench tested prior to shipping to ensure they are in perfect working condition before arriving at your location.

Therefore, some coffee grinds and remnants of water may be visible upon receiving the machine. This does not indicate the machine is used. We only ship brand new machines unless we state otherwise.

This thing is awesome and arrived SUPER quick!

Quick and easy with a little mess.

As advertised, it tamps consistently. Each tamping process is quicker and easier than manual tamping. I like the fact the process requires only one hand, as opposed to two in manual.
The only drawback is that the tamper surface gets dirty with the grind very quickly (because it does not 'twist" as in manual). After 3 or 4 tamps we have to clean it with a rug or a brush, leaving the coffee grind around the device.
Overall, we are happy with the purchase, and my overworked wrist with a tendonitis thanks a lot. I know it is an expensive investment, but loss of my hand will cost a lot more.

Well right at one year ago I got my Alex Leva and dearly love it .. But today after right at one year of use it has stopped working... You flick the on switch and nothing , the PID does not light up but the on/off switch lights up sometimes but not always.. Other than the light on the on/off switch the machine seems dead... I do hope this is not a big deal after just a year of use... Up until this point I would give my Alex Leva a five star rating , but now I may have to revise my review... We shall see.
