Key Features and What They Mean
Programmable Volumetric Dosing Buttons
Program single and double shots right into the machine. The Nuova Simonelli Aurelia II Volumetric will deliver the correct volume all by itself. This model comes with multiple programmable options for a wider selection to save time in more demanding environments.
Manual Dosing Button
Need to pull a longer or shorter espresso shot for a customer? Using the manual button makes it happen on the fly. Don’t waste time reprogramming buttons and losing settings for customized espresso shots.
Copper Heat Exchange Boiler
A 14 or 17 liter heat exchange boiler (depending on the number of groups) makes this model a lean, mean latte machine. Able to brew and steam at the same time at an incredible speed, it will deliver drink after drink of superb quality no matter how busy it gets in your shop. Copper increases the boiler’s energy efficiency and adds antimicrobial properties for better sanitation.
Raised Group Heads
Most coffee shops offer drinks in different sizes. With raised group heads, you can fit tall cups directly under the group heads. Since there’s no need to transfer espresso from shot glasses to tall cups, the crema will easily stay intact for a gorgeous presentation.
Soft Infusion System
Tamping takes lots of patience and practice, and even then it can be difficult to get right each time. Soft infusion settles the coffee in the group head, eliminating issues caused by human error. By pre-wetting the coffee, this system draws the delicate flavors in the coffee out better than other systems.
Cool Touch Wands
Avoid pesky burns on hot steam wands. The wands on the Aurelia II Volumetric are designed to stay cool. This has the bonus advantage of providing easier cleaning since milk won’t burn onto the wands immediately.
Surface LEDs
LED lights illuminate the work area for baristas to see a whole lot better. Well-lit conditions are crucial for detailed work like espresso preparation and milk frothing.
Push Pull Steam
Long hours on the espresso machine won’t bother baristas working with a push-pull steam trigger. Gently tap it on and off to control steaming with easy movements and keep your wrists feeling good all day long.
Automated Cleanings
When it comes time to clean the espresso machine at the end of a long day, nothing is more convenient and time-saving than a self-cleaning system. Automated backflushing lets baristas see to other tasks and expedite closing up shop.
Power Saving Options
This machine is extremely energy-efficient, saving power when possible to reduce your carbon footprint.
Reverse Mirror
The backplate provides a mirror that shows baristas all aspects of the brewing process. Access all angles of the espresso as it pours to maximize quality control.
Bar Pump Gauge
This gauge displays the pressure related to the pump while brewing, important information for monitoring the espresso.
Water Level Indicator
Checking that the boiler water levels are where they need to be is possible with this indicator. Ensure that all is working properly with greater ease.
Options
Smart Wand Options
The Nuova Simonelli Aurelia II Volumetric is compatible with one left or right Auto-Steam or temperature-controlled Gooseneck Wand.
Auto-Steam Wand
Replacing a manual steam handle with a user-friendly button, the Auto-Steam Wand requires no input from the barista to texture milk.
To use this feature, baristas simply place the wand in a pitcher filled with milk and let the Auto-Steam Wand do the rest.
Automating milk steaming, this feature facilitates superb results for every cappuccino, latte, and macchiato.
Temperature Controlled Gooseneck Wand
Also replacing one of your manual steam handles with a button, the Gooseneck Wand steams to the accurate temperature.
Once pressed, the steam wand reads the temperature of the milk. The barista then textures the milk by moving the pitcher.
When the milk reaches the desired (set) temperature, the steam automatically turns off, leading to a more consistent drink and less burnt milk.
Pod Kit Adapter
This machine supports a standard pod kit adapter.
We will install these left to right, unless a particular head is specified in the comment section while checking out.
These can also be moved by the user with a screwdriver.

Common Questions and Answers
Q: What is the difference between volumetric and manual dosing in the Aurelia II Volumetric?
A: Volumetric and manual dosing represent two very different brew processes on the user’s end.
Volumetric controls are the easiest to operate and provide the highest level of consistency.
This is because the Aurelia II’s volumetric dosing buttons need only be pushed once to generate the perfect single or double espresso. The machine will automatically stop the brew process when the correct levels have been reached.
The manual button is quite different in that it offers more control to the user, making it a flexible option for users with more knowledge of the brew process.
Instead of having the machine end extraction, the barista will manually end it via the manual button.
While this means that the barista will need to know exactly when an espresso shot is fully extracted, it also means that any customized espresso can be poured on demand.
Q: Who needs the pod kit adaptor for the Aurelia II Volumetric?
A: Espresso pods are easy for beginners to use. Instead of using freshly ground espresso, you’re brewing with preformed coffee pods. It’s somewhat similar in concept to a Keurig K-Cup pod.
If you want the Barista Championship machine but easy usage for baristas with little training, you can opt for the pod kit adaptor.
It can be helpful for restaurant employees and any staff lacking the coffee background baristas have.
Q: How do I use the bar pump gauge on the Aurelia II Volumetric to make better espresso?
A: Placed right on the front of the Aurelia II Volumetric, the bar pump gauge displays pressure readings linked to the pump while espresso is being brewed.
Generally, you want to see the pressure reach approximately nine bars. If this is not happening, it’s usually an easy indication that you’ll need to adjust your brew ratio.
What’s your brew ratio? It’s actually a simple concept—don’t let the terminology scare you. It’s basically the amount of coffee you use in a dose to the resulting liquid volume of the espresso.
Let’s say the pressure gauge is reading too low when you pull a shot. Seeing this information tells you that you might want to add more coffee to your dose.
Alternatively, you may need to tamp a little harder or adjust the fineness setting on your grinder. Either way, the pressure gauge can guide you toward the right process.
