The installation of a water softener is mandatory for all users that don't meet the required water specifications, failure to do so will void your warranty.
It is recommended to always add a water filter to your order if you do not have one already.

Q: What is the difference between volumetric and manual dosing in the Appia II Volumetric?

A: This model is a volumetric machine, meaning that its primary dosing function is automated. Users can just press one of the single or double buttons and let the machine automatically end the brew cycle.

But it isn’t necessarily easy to pull a shot with a different volume or timing specification on the fly with volumetric controls. That’s why this model’s manual dosing button is a bonus.

Pressing the manual dosing button will start extraction. The user can then decide exactly when extraction should end, pressing the manual button again to stop brewing.

Volumetric dosing gives baristas the opportunity to make an espresso shot they know will be as good as the last without even needing to watch it since the machine ends brewing at the correct volume.

Manual dosing, on the other hand, gives baristas the freedom to craft a custom-made shot anytime. This is an advantage especially to more experienced baristas who know exactly what they want from extraction.

Q: How do you use the bar pump gauge on the Appia II Volumetric to make better espresso?

A: The bar pump gauge will show you the pressure reading connected to the pump while you’re brewing espresso. If the pressure is not adequate (in most cases, if it’s not reaching about 9 bars), something is potentially off with your brew ratio.

Your brew ratio is essentially the amount of coffee you use for an espresso shot to the resulting liquid volume. 

So if you’re pulling shots and the pressure gauge is reading too low, you might need to add more coffee to your dose. Alternatively, you could try changing the fineness setting on your grinder as this can often be the source of the issue.

Q: What is pre-infusion and how does it work in the Appia II Volumetric?

A: Pre-infusion is an approach to espresso meant to open up the flavors as much as possible by letting the coffee bloom in the group.

In the Appia II, the coffee bed is fully saturated with a gentle stream of water before the pump is activated. This guarantees that the water will evenly reach all of the coffee particles, preventing channeling and fully extracting the flavors.

An uneven tamp is very easily mitigated by Nuova Simonelli’s soft infusion system. It will settle the coffee in the group head and ensure balanced saturation.

For these various reasons, pre-infusion is a feature you’ll see in many premium espresso machines. The beautifully developed flavor is mainly what baristas are after.

Q: Why is the Appia II Volumetric push-pull steam trigger easier to use than twist-turn steam triggers?

A: If you have wrist pain, whether related to carpal tunnel or any other ailment, the ability to push a switch instead of rotate your wrist can be huge.

The order was placed incorrectly (wrong color) and am still waiting for the backorder corrected color panels. The water spout drips for about 2 ounces after it stops, and the pressure gauge is faulty and needs to be replaced. I'm definitely NOT satisfied with this order.

The order was placed incorrectly (wrong color) and am still waiting for the backorder corrected color panels. The water spout drips for about 2 ounces after it stops, and the pressure gauge is faulty and needs to be replaced. I'm definitely NOT satisfied with this order.
