Key Features and What They Mean
Volumetric Dosing Controls
The Nuova Simonelli Appia II Volumetric comes with programmable buttons that automate single and double shots. Providing maximum convenience and consistency, the user-friendly volumetric buttons help to achieve a superior level of quality for customers with little training for new baristas.
Manual Dosing Button
This button fixes the one downside of volumetric dosing—not being able to pull a longer or shorter shot on the fly. Baristas can manually end the brew process and tailor each espresso shot to customer requests without needing to fiddle with programmed levels.
Soft Infusion System
Nuova Simonelli’s pre-infusion system reduces inconsistencies created by human error. If tamping is off, the espresso will not be affected. This system is key in enhancing the espresso flavors.
Raised Group Heads
You can place tall cups directly under the group head(s) instead of having to brew into shot glasses and transfer the espresso. This saves precious time and allows baristas to easily keep the crema intact for beautiful Americanos.
Cool Touch Wands
The specially insulated steam wands on the Appia II Volumetric remain cool to the touch, reducing burns. They’ll also reduce the amount of time it takes to clean them by resisting milk caking.
Push Pull Steam
Sensitive wrists? You’ll love this model’s push-pull steam trigger. Unlike turning steam valves, the push-pull steam mechanism can be gently pushed into the on and off positions to keep your wrists happy.
Bar Pump Gauge
This gauge shows you the pressure related to the pump during espresso brewing. Reading the gauge will guide you toward the right brew ratio, helping you figure out how much coffee to dose and perfect your process.
The backplate acting as a mirror gives baristas visual access to all angles of the espresso while it extracts. Without needing to get physically close to the shot while it pours, you can see it in detail to monitor quality and assess your product.
Water Level Indicator
The water level indicator makes monitoring boiler water levels simple. No guesswork required—make sure that all is in working order at all times.
Cleaning the espresso machine properly at the end of the day is a must. Automated cleanings eat up less time and energy—just choose the group that needs cleaning, press the button to start the cycle, and let the machine do the heavy lifting.
Appia II Volumetric 1 Group 110V
The 1 group configuration is the ideal model for small to medium businesses and home users. It’s compact and perfectly adapted to low- to medium-volumes.
This configuration comes with AutoSteam functionality, automating and simplifying milk steaming for even greater convenience.
Appia II Volumetric 2 Group 220V
The 2 group option is the configuration for medium to large businesses. High-volume establishments typically need more than one group.
Baristas will be able to make two or more drinks at one time with ease.
With more than double the boiler capacity of the 1 group configuration, the 2 group is what you need to streamline beverage production during peak hours.
Appia II Volumetric 3 Group 220V
3 groups make the ultimate efficiency for large cafes and restaurants. High-volume locations need a hard-working espresso machine to keep the production pace up and provide faster customer service.
Two baristas can comfortably work on multiple drink orders on this configuration.

Common Questions and Answers
Q: What is the difference between volumetric and manual dosing in the Appia II Volumetric?
A: This model is a volumetric machine, meaning that its primary dosing function is automated. Users can just press one of the single or double buttons and let the machine automatically end the brew cycle.
But it isn’t necessarily easy to pull a shot with a different volume or timing specification on the fly with volumetric controls. That’s why this model’s manual dosing button is a bonus.
Pressing the manual dosing button will start extraction. The user can then decide exactly when extraction should end, pressing the manual button again to stop brewing.
Volumetric dosing gives baristas the opportunity to make an espresso shot they know will be as good as the last without even needing to watch it since the machine ends brewing at the correct volume.
Manual dosing, on the other hand, gives baristas the freedom to craft a custom-made shot anytime. This is an advantage especially to more experienced baristas who know exactly what they want from extraction.
Q: How do you use the bar pump gauge on the Appia II Volumetric to make better espresso?
A: The bar pump gauge will show you the pressure reading connected to the pump while you’re brewing espresso. If the pressure is not adequate (in most cases, if it’s not reaching about 9 bars), something is potentially off with your brew ratio.
Your brew ratio is essentially the amount of coffee you use for an espresso shot to the resulting liquid volume.
So if you’re pulling shots and the pressure gauge is reading too low, you might need to add more coffee to your dose. Alternatively, you could try changing the fineness setting on your grinder as this can often be the source of the issue.
Q: What is pre-infusion and how does it work in the Appia II Volumetric?
A: Pre-infusion is an approach to espresso meant to open up the flavors as much as possible by letting the coffee bloom in the group.
In the Appia II, the coffee bed is fully saturated with a gentle stream of water before the pump is activated. This guarantees that the water will evenly reach all of the coffee particles, preventing channeling and fully extracting the flavors.
An uneven tamp is very easily mitigated by Nuova Simonelli’s soft infusion system. It will settle the coffee in the group head and ensure balanced saturation.
For these various reasons, pre-infusion is a feature you’ll see in many premium espresso machines. The beautifully developed flavor is mainly what baristas are after.
Q: Why is the Appia II Volumetric push-pull steam trigger easier to use than twist-turn steam triggers?
A: If you have wrist pain, whether related to carpal tunnel or any other ailment, the ability to push a switch instead of rotate your wrist can be huge.
Even if you don’t have any trouble with your wrists but you work long hours on an espresso machine, you may notice the difference.
The push-pull steam trigger on the Appia II has another benefit. You’ll be able to control the steam power with a gentle push of the trigger or turn it on and off in a snap.
Frothing milk can be tricky business. It’s easy to go overboard when aerating the milk. A more user-friendly steam trigger can help with this.
