Dual Copper Boiler System

The R58 has a high-capacity boiler system with a 1.8 liter insulated copper steam boiler and a .58 liter group boiler. Producing excellent temperature stability, it allows you to brew and steam at the same time all day long.

Common Questions and Answers

Q: How do you use a semiautomatic espresso machine like the R58?

A: Using a semiautomatic machine like the R58 is very different from using an automatic model that dispenses a programmed espresso shot when you press the dosing button.

But it’s not difficult! When you insert the portafilter with the tamped coffee in the R58, just pull the lever attached to the group all the way to start brewing. You’ll see the espresso start to drip and then pour. 

When you feel that the coffee is finished extracting, push the lever in the other direction to stop the brew process. You can steam milk just like you would with an automatic machine if you’re making a milk-based drink.

As you can see, the major difference between using the R58 and your typical automatic with programmed dosing buttons is the manual control—you’re deciding when the espresso is ready each time you prepare a shot.

This gives you the ability to play around with the extraction, but it also contributes to a solid sense of the process itself if you’re learning about espresso. You’ll be an expert in no time.

Q: How does the E-61 commercial group in the R58 work?

A: Rocket models outfitted with E-61 groups channel hot water from the boiler to the group head and back at all times, even when the machine is idle. As a result, the group temperature stays within a more ideal brewing range, which is what you need for consistently flavorful espresso.

Also designed for automatic pre-infusion, the E-61 group releases water in a slow buildup of pressure when you pull the brew lever. Inside the group head, the coffee puck is fully saturated before full pressure is reached.

When you taste the espresso, you’ll find that the flavors are well-developed. This is because the extraction is nice and even with the subtle flavors drawn out of every coffee particle.

Basically, the E-61 group offers consistency and better espresso flavor, but with nothing extra required from the user. It’s just good engineering.

Q: What is the PID controller in the R58 and what does it do?

A: A PID controller is a system that regulates mechanical processes based on an algorithm. In the case of the R58, the PID provides temperature control, continuously monitoring variables and adjusting for the correct temperature.

Assisted by the PID controller, you can adjust the group and steam boiler temperatures in Celsius or Fahrenheit. As temperature fluctuations are not uncommon in espresso machines, being able to set accurate temperatures gives you access to more consistent shot performance.
